What is Pepsin?

Pepsin is usually extracted from the stomach of pigs, cattle and sheep. It is a kind of protease secreted by the main cells of gastric gland. It has the ability to hydrolyze protein with molecular weight of 35000 da. It is commonly used in protein hydrolysis and food products processing.
