L-carnosine, scientific name β - alanyl-l-histidine, is a dipeptide composed of two amino acids, β - alanine and L-histidine, which is a crystalline solid. Muscle and brain tissues contain high concentrations of carnosine. Carnosine, along with carnitine, was discovered by Russian chemist gulevitch. Studies in the UK, South Korea, Russia and other countries have shown that carnosine has strong antioxidant capacity, which is beneficial to human body. Carnosine has been proved to be able to scavenge reactive oxygen species (ROS) and α - β unsaturated aldehydes formed by the excessive oxidation of fatty acids in cell membrane during oxidative stress.

Carnosine is not only a nutrient, but also can promote cell metabolism and delay aging. Carnosine can capture free radicals and prevent the reaction of glycosylation.
