Lipase (LPS) is a group of low specific lipohydrolases, mainly from the pancreas, followed by stomach and small intestine, which can hydrolyze a variety of glycerides containing long-chain fatty acids. The pancreas usually secretes the same amount of lipase and co lipase into the circulation, but because the relative molecular weight of CO lipase is small, it can be filtered out from the glomerulus. In acute pancreatitis, the ratio of CO lipase / lipase decreases. The determination methods include titration, electrode method, turbidimetric method, spectrophotometer method and fluorophotometer method.

Lipase (lipase, glyceride hydrolase) belongs to carboxyl ester hydrolase, which can gradually hydrolyze triglycerides to glycerol and fatty acids. Lipase exists in the tissues of animals, plants and microorganisms (such as molds, bacteria, etc.) containing fat. It includes phosphatase, sterolase and carboxylesterase. 1. For baking industry
The effect of lipase in the flour product is that it can repair the weak part of the structure of gluten network; improve the
stability and holding capacity of the dough; make the bread core white and luster; make steamed bread white and shiny. It can comprehensively improve flour product quality if lipase work with food grade xylanase,fungalα-amylase and glucose oxidase.

2. For leather working industry
In the leatherworking industry, The enzyme is specific to the fat in the leather. It can soften the raw materials uniformly under mild conditions; increase leather yield on the basis of reducing the amount of chemicals; reduce skin wrinkles with remarkable effect. The enzyme is often used in the process of degreasing and softening. Lipase usually work with alkaline protease, in this way, it can optimize the effect.
