Vitamin B1, also known as thiamine or thiamine, is one of the B vitamins.  It promotes normal glucose metabolism and is essential for the maintenance of nerve conduction, heart and gastrointestinal function.  It combines with adenosine triphosphate to form vitamin B1 pyrophosphate (thiamine diphosphate coacidase), which is an essential coenzyme for carbohydrate metabolism. Lack of this coenzyme can lead to blocked oxidative metabolism and pyruvate and lactic acid accumulation, affecting the body's energy supply.  Vitamin B1 also inhibits the activity of the cholinesterase C enzyme when deficient;  Cholinesterase activity increased, acetylcholine hydrolysis accelerated, leading to nerve impulse conduction disorders, affecting gastrointestinal and cardiac functions.  Vitamin B1 is rich in seed skin and germ, such as rice bran, wheat bran, etc.  Whole grains contain more than refined rice or white flour.  Other such as yeast, lean meat, peanut, soybean, liver, whole wheat, fresh vegetables such as cabbage, celery, Chinese traditional medicine parsnip, plantain seed, coix seed are rich in vitamin B1.  It can be used as a spice, mainly for the preparation of bitter drinks.
