Alpha-Amylase is made of Bacillus Subtilis in the Fermentation and extraction method, is widely used in the liquefaction of starch sugar, alcohol, beer, monosodium glutamate, Fermentation industries and textile, printing & dyeing, desizing and etc.This product can hydrolyze starch into dextrin of different length and other low molecular sugar,glucose,and altose,decrease the viscosity of starch paste.
Food grade α - amylase (medium temperature AAL type) is a kind of biological enzyme prepared by submerged fermentation and refining of Bacillus subtilis. It can hydrolyze α - 1.4 glucoside bond in starch, glycogen and its degradation products, and produce dextrin and a small amount of low sugar, which makes the viscosity of colloidal starch solution decrease rapidly. α - amylase (medium temperature AAL) is brown liquid product.
Alpha amylase enzyme(high temperature type) is refined by Bacillus licheniformis through liquid deep fermentation, ultrafiltration and other processes. It is a new type of liquid thermostable amylase. It does not need to add calcium ions. It can still catalyze efficiently when pH is as low as 5.0, and has excellent thermostability. It can be used in the spray liquefaction system at 110 ºC.

1.For beer industry: The recommended dosage is 0.2-0.5L of the enzyme preparation per ton of total raw materials, added at liquefaction. However, the optimal dosage depends on the composition of the raw materials and the specific process parameters and should be determined by testing different dosages at the brewery.
2.For alcohol industry: Add this enzyme 0.3-0.6L per ton of total raw materials with pH 5.5-6.5, keep temperature at 85-90ºC for around 120 minutes.
3.For starch sugar industry: Add this enzyme 0.4-0.5L per ton of dry starch after pH adjustment. The liquefaction temperature can reach to 100±5ºC and then keep temperature at 95-97ºC for 60-120 minutes.
